Where do sommeliers eat? With Cássia Campos and Dani Bravin, from Sede261, in SP

Cultivated around the world for its flavors, aromas and way of making that most resembles an art, the wine that’s what brought the sommeliers together Daniela Bravin and Cassia Campos. Today, the two command the Headquarters 261a wine bar in Pinheiros that offers differentiated labels and an experience that is out of the ordinary.

Together they still run the Spanish tavern Huevos de Oroalso in Pinheiros, where they serve tapas, tortillas and sandwiches, as well as other snacks – accompanied, of course, by a good wine list.

But it all started years before: Daniela has been a sommelier for the Brazilian Association of Sommeliers since 2002, being a reference in wine and a pioneer of her generation in Brazil. She passed through the homes of renowned chefs, such as Benny Novak, Paola Carosella and Jefferson Ruedauntil opening the Bravin restaurant, which operated until 2015 in Higienópolis.

In the same period, he joined the sommelier Cássia Campos, who fell in love with wine while studying a postgraduate degree in Food Design in Europe and became sommelier and manager of Grupo Chez for three years. At the time, they kicked off the Sommelier Itinerante project, which was the embryo of Sede261.

But in addition to wine, both share similar tastes in gastronomy. Below, Daniela and Cássia share their favorite restaurants to eat – and drink – right in São Paulo:

Hamatyo sushi

O Hamatyo sushi it’s located between our two businesses and whenever we can we make a break for sushi between work. It is a very traditional bar of impeccable quality, where veteran Yoshida San personally chooses the fish he serves.

The place, which has a discreet facade, focuses on cold dishes of traditional Japanese cuisine. Bluefin tuna is a very popular item there.

Wolf

Monday is our day off and we always occupy table number 1 in the restaurant to spend the afternoon eating and drinking caipirinhas – because the sommelier doesn’t live on wine alone!

O Wolf it’s a great place to enjoy a sunny afternoon and we always find people from the area, who go there to enjoy their time off too. Among the cold cuts, rice and couscous counter on the menu, our highlight is the fried chicken (R$38 six pieces and R$66 twelve pieces). It is very good and accompanies pequi mayonnaise and tamarind sauce.

Bráz Pizzeria (Pinheiros Unit)

We are people of habit and have been going to the same places for years. So, the Braz Rua Vupabussu, in Pinheiros, is our destination every Sunday in the early evening, where we meet friends, open special wines and talk about how the week was. It is worth saying that the service provided by Samuel and his team is a 10!

Of the orders, we start with the corniccione primo (R$30), which is made with thin pasta with tomato sauce, garlic, olive oil and parmesan. Afterwards, we always order the classic Portuguese (R$60 for small and R$95 for large), with mozzarella, ham, boiled eggs, onion and black olives.

Nelita

As the restaurant closes later than our bars, going to Nelita it’s always a great end to the night for us. It’s a delight to sit in front of the kitchen and see the mastery with which the chef Tássia Magalhães and his team run the kitchen.

From there, creations such as agnolotti stuffed with goat cheese, candied pink lemon sauce and honeycomb are produced; the half moon ravioli, stuffed with very creamy corn and the sous vide fish with crispy skin and Brazil nut-based sauce, among others. It is also always a pleasure to taste wines with the team.

Steakhouse Boi na Brasa

Open since 1966 in the city center, I, Daniela, go to Boi in the hot since my mother’s belly, and I grew up with my parents at those tables. Cássia met her when she came to live in São Paulo and she also loves it.

It’s our Christmas tradition, as lunch is always there. We ate sirloin with Portuguese fries and farofa (about R$83.80 for two people), we drank caipirinha and draft beer in the invariably dented aluminum mug. Tradition is tradition!
