The name already reveals the origin: the Milanese was born in the city of Milan . The oldest reports came from the Italian writer Pietro Verri, in his book Story of Milan which talks about a document from the year 1148 which describes a lunch in the Basilica of Saint Ambrose that served the breaded veal chop .
But it wasn’t the Italian people who were responsible for making this dish famous around the world: the Austrians put the Wiener Schnitzel – a very similar dish that was also made with breaded veal. The truth is that it’s hard to resist a steak, with a golden and crunchy crust.
One of the restaurants that gained notoriety for the milanesa, the restaurant NOU by chef Amílcar Azevedo sells about 3,500 units per month. Served with Sicilian lemon risotto, the chef says the dish is a comfort food at the same time it is an indulgence.
“Today no one wants to fry at home, but everyone wants to eat, because they have childhood memories. Here, we chose to serve the milanesa with the Sicilian lemon risotto because it has an acidity and makes an interesting counterpoint. But, of course, there are those who prefer it with rice and fries, with cassava, it’s up to the customer’s taste. He asks, we adapt”, says Amilcar.
And since no one is made of iron, here’s a list of where you can find a crispy milanesa in São Paulo.
