Where to eat stroganoff in São Paulo, a favorite dish for Brazilians

With different ways of writing, there is a dish that marked my childhood: the Beef and cream , stroganov , Beef and cream or бефстроганов (in the Cyrillic alphabet). The dish, which at home we said was my mother’s specialty, was the protagonist of countless birthdays and get-togethers of my family.

Here’s a tribute: my mother’s stroganoff is great and it was with her that I learned to prepare mine (with a few small variations).

Your origin dates back to 19th century Russia and, among several versions found, it appears that its name derives from the powerful Stroganov family, that it had among its employees a French chef who would have created the recipe.

There is even a version (for me, logical) in which the chef would have added smetana (sour cream) to the classic meat fricassee to make it more suitable to the family’s taste and, thus, make it easier to chew the strips of meat. .

if in Russia the delicacy is served with mashed potatoes and coleslaw, in his travels around the world the dish has been gaining adaptations. They say it was France responsible for adding mushrooms and that United States fries came out.

But what about in Brazil? I don’t know of places that don’t serve beef stroganoff with rice and straw potatoes (both in different styles).

ICI Brasserie

Inspired by the Parisian breweries of the 19th century, which served quick meals, the ICI Brasserie is, I dare say, one of the most beloved and varied restaurants in the city, with three units spread across the capital of São Paulo.

What is a pizzeria doing in this text? Few people know, but one of the tastiest beef stroganoffs in town – for my taste, obviously – is made by Pizzaria Camelo.

Establishment that has been operating in the capital since the late 1950s, the house serves, between rounds, stroganoff for dinner in the meat (R$113.40), chicken (R$108) and shrimp (R$134. 40), all accompanied by white rice and potato straw.

Another classic in the city, the Freddy Restaurant was born as a symbol of classic French cuisine almost 90 years ago. Itaim Bibi’s house serves classics of this cuisine, including snails, scallops, mussels and slices of foie gras, but also masterfully makes the Russian delicacy.

The curiosity is that, there, stroganoff is not on the menu, but can be ordered directly from the waiter. The dish comes in beef (R$180), duck (R$229) and shrimp (R$329) versions.

The idea of ​​opening a business specializing in stroganoff came during a season spent by publicist Judith Rosset in Barcelona. Started exclusively in delivery, the venture grew and recently a physical store was opened in Pinheiros.

The difference is that Nof has shrimp (R$80), beef (R$58), pork (R$52), vegan (R$48) and chicken (R$46) options, as well as a variety of rice and straw options. to accompany, in which the customer customizes his own dish.
