Winter soups: 5 recipes that warm the heart

Imagine a gloomy evening, with moisture penetrating your bones and your brain tired for a thousand reasons: you are not better off just thinking about savoring something simple but at the same time enveloping, which brings joy and makes you water as soon as you sink the spoon ? There velvety it has this effect: we are great admirers, and in the dark months of the year it is the perfect dish to make the most of seasonal vegetables.

However, do not confuse the cream or vegetable puree with the velvety: the former are based on vegetables often not coupled and seasoned with aromas and extra virgin olive oil, the velvety has a butter base or provides a lard with panna or other fatty ingredients. We are not here to formalize ourselves too much, but technically it is right to specify so that you know what kind of recipes to expect.

Winter offers colorful vegetables with an intense and particular flavor, rich in vitamins and fiber, low in calories and very versatile: you can combine them all with a very long list of spices and aromas, we demonstrate it in our article on January vegetables. The first cream is our favorite, based on celeriac, potatoes and tofu. Celeriac is delicate, consistent like a boiled potato and with a vague flavor of fennel: with grilled tofu and chilli it becomes an almost oriental-looking, delicious dish. To stay on snow-white shades, we also describe the cream of cauliflower: a roux at the base, toasted cashews, vegetable broth and milk, a drop of kefir milk.

From white to green, with the cream of spinach and pine nuts and the cream of broccoli, potatoes and pumpkin seeds: both light but very tasty, to be made in large quantities and offered to the whole family. Finally, a colorful and naturally sweet note, a perfect recipe also for a particular occasion: the cream of beets and leeks, love at first taste!
