The world champion of World Cheese Awards And Olavidia of the dairy, or rather, of the Quesos y Besos queseria which for four generations has been producing goat cheese in Guarromán on the road from Toledo to Cordoba.

Olavidia cheese represents the oldest form of fermentation of Spanish cheese: made with the indigenous lactic bacteria of milk where a spontaneous loss of part of the whey occurs, with a slow pasteurization. The purest tradition in Asturias therefore wins. A triumph for the entire world dairy community that gathered in the capital of the Principality, a true Iberian “homeland” of cheese.
For its unmistakable taste and its unique scent it has just earned the first place at World Cheese Awards 2021, the “Cheese Olympics”, which have always been organized by the British of The Guild of Fine Food, now in its 33rd edition. This year – after a hiatus imposed by the pandemic – the World Cheese Awards took place in Oviedo, as part of the Asturias Paraíso Natural International Cheese Festival 2021 and the edition was a record.
Olavidia stood out in an edition with numbers never reached: ben 4,079 cheeses registered (7% more than in the 2019 edition), from 45 countries, protagonists of an entire day of tastings.
The first selection was made by a jury made up of ben 230 between journalists, experts and professionals. Divided into teams, they gave a score to all competing cheeses based on to the visual aspect, to the structure, to the consistency, to the smell and finally to the taste to then award each one a medal of Bronze, Silver or Gold e Super gold (the best among the golds of each tasting table). In all 16 Super Gold cheeses, which were then re-tasted by one super jury, made up of the most famous cheese experts in the world, who directly elected the World Champion. Each judge expresses his preference (from 1 to 7) for the 16 Super Golds before the whole world, to the point of decreeing the world champion of cheeses.
Our representative for Italy was the journalist and gastronome Alberto Marcomini, who works in RAI. And Italy, with the city of Bergamo, was also the last city to host the World Cheese Awards in the latest edition, that of 2019.
But our country also played well, and once again thanks above all to Parmesan Cheese that by a whisker – and amidst some controversy – it was not the world champion of the last edition (and that in any case it was the only cheese to win the competition, in 1977). Representing it is the “Nazionale del Parmigiano Reggiano”, made up of 96 dairies representing the DOP. Event within the event, in Oviedo it was also exhibited a 21-year-old wheel of Parmigiano Reggiano, one of the most aged cheeses in the world, protagonist of an auction that runs until November 6 on Givergy givergy.uk/parmigianoreggiano2021, the proceeds of which will go entirely to charities.
