THE Barbecue Farm It has been an absolute success since the day it opened its doors, in an old house in the Morumbi neighborhood, in São Paulo. With endless lines and a high average ticket, the house that receives 25 thousand people per month, has just gained a branch in Brasília and, soon, others in Campo Grande, Goiânia and Curitiba.
No wonder the group behind this true phenomenon, Sounds Foods (the company responsible for F&B within the UMAUMA group) hopes to replicate this formula for success with the opening of Barbecue of the Seawhich, as the name implies, includes red meats and fish and seafood take center stage on the menu.
With the expectation of receiving 12 thousand people per month, the Barbecue of the Sea officially opens to the public in the second half of April, under the command of the chef Dario Costa.
Dario, who is also in charge of houses like God Mansion (São Paulo) and Açougue do Mar, Paru Restaurante and Madê Cozinha, in Santos, states that “the idea is to use unconventional parts of Brazilian fish, valuing the simple and making the most of all parts of the fish in the recipes to provide new experiences. to customers”.
The menu includes white fish crudo – a raw fish lightly cured with chestnut milk, tangerine and chili pepper (R$ 42); as well as oysters served with three options: lemon, acerola slushie and mango vinaigrette (R$ 45 with 4 units).
With squid, there is the skewer with green grapes (R$42 for 2 units), and the squid and octopus rice, made with seafood and pork broth (R$96). To share, the chef created the wellington tuna (R$200) and the lambe-lambe rice – a classic caiçara with Spanish roots with shellfish (R$85). For those who want a sandwich, the shrimp roll is a reference to the American lobster sandwich, which, in Dario’s version, is made with pink shrimp served on homemade bread and fries (R$60).
Everything is very original, so don’t go expecting to eat the classic (and already tired) grilled salmon – there’s even a writing on the wall that they don’t sell salmon there.
Churrascada do Mar also has two aquariums with wild and fresh oysters and the “Açougue do Mar”, a kind of fish shop with different cuts and treatments, such as dry aged.
“We want meat lovers (and food lovers in general) to be able to dive under the sea and experience fresh ingredients prepared in different ways”, says Pierre Grego, one of the members of the UMAUMA group.
The decoration was based on the fishing universe, with items that refer to a fishing village, with restored items, such as fishing nets, paddle and other natural elements. The space, like its older brother, also has a large children’s area for parents to enjoy.
In addition, a branch of Sushi Vaz, a Japanese restaurant that appears on the list of darlings of those who love Japanese cuisine in São Paulo, is part of the complex.
