At 15 years old, romantic Chou launches new menu with new dishes

Turn and move, the chef Gabriela Barretto likes to review and renew your restaurant’s menu Chou, in Pinheiros. The house has been successful for 15 years with its product cuisine: one that chooses the recipe based on the ingredient and not the other way around.

Gabriela takes into account the seasonality of inputs, serving what is freshest and most lush in each season.

To match the low temperatures that are coming, she has just launched a new menu with new recipes and others that were missed from past seasons.

Among the new ones are the fresh and soft peach palm (R$49), baked in the oven, finished on the grill, and seasoned with capers, lemon zest and pangrattato (small pieces of bread baked with olive oil, salt and black pepper until they turn into crispy crumbs) and the pink shrimps (R$105), which are cooked over coals and briefly finished in the frying pan, with just butter, garlic, dill and lemon.

Chou's menu always has room for a “vegetable of the season”, which this time is grilled chard with dukkah , hazelnuts and lemon (R$38). Also among the new innovations are the grilled mashed potatoes (R$38) and the fresh tagliatelle with house-made ricotta , golden shiitake and eryngui mushrooms (R$97), which also includes raw milk cheese from Alto da Aparecida, a cheese factory in Carvalhos, Minas Gerais.

Among the dishes returning to the menu is house-made tagliatelle with Giuseppe's ragu (R$105), a sauce described by Gabriela as “a bolognese with history and tenderness”. It's a preparation she learned on her first trip to Italy, with Giuseppe, a friend's father. The sauce is made with tomato passata and pork ─ Chou's kitchen only works with Duroc pigs, raised by Del Veneto, in the Paraíba Valley. It is also from Duroc pork pork chop (R$127), which is slowly roasted with apple cider vinegar, gochujang pepper and oriental spices.
