Chez Claude do Rio revives Olympe recipes in special February menu

This is one of those opportunities that you shouldn’t miss. The chef Claude Troisgros temporarily displayed in the restaurant Chez Claude from Rio, a commemorative menu that revives memorable recipes from Olympe — restaurant with a Michelin star that was a landmark in Rio’s gastronomy, closed during the pandemic and was greatly missed.

The à la carte menu, called Olympe Experience also celebrates the chef’s 45th anniversary in Rio. It will run at least until the end of February and includes four starters and five dishes with great flavor combinations.

Fish and seafood star in the main starters, such as oyster from Santa Catarina with a touch of tucupi vinaigrette (R$ 55; 4 units) and the scallops with peach palm spaghetti and dulce de leche (R$84).

If you have to choose just one, don’t miss the tuna tartar (R$64). Full of freshness, it comes crowned with marinated cucumber and watermelon and crunchy tempura, bathed in an excellent miso sauce.

It’s also worth the crepaze (R$ 48), a pancake filled with watercress mousse served on a velvety gorgonzola cheese cream.

During our visit, the two dishes we tried were impeccable. One of them is the rigatoni (R$ 152). The pasta arrives covered in a killer combination of green cream, cavaquinha ragu, asparagus and eryngui mushroom.

It also leaves a taste of wanting more grilled and sliced ​​duck breast (R$ 132). Very tender, it is served with a red wine sauce and other secrets with braised endive, as well as a surprising passion fruit and green apple puree seasoned with cloves, cinnamon and star anise.
