The first Best Contest Fondue from Brazil took place last Monday (15) at the residence of the Consul General of Switzerland in São Paulo.
Officially endorsed by Turismo da Switzerland in Brazil, in partnership with the SerTãoBras association, the contest was an elimination stage to select the candidate who will represent Brazil in the World Cup Fondue from switzerland .
The big winner was Clara Gaehwiler, graduated in Gastronomy and Veterinary Medicine and the daughter of a Swiss and Brazilian father, she lives in the city of Pirenópolis, in Goiás, where she founded a restaurant specialized in cheeses and hamburgers, Ursus – Steak, Burger & Cheese, and also Casa do Suíço Empório, where she brings together local and Swiss products. In addition, she is still technically responsible for the Alpina Cheese Factory.
In her recipe, she mixed 50% Gruyère DOP, which was a contest rule, with Brazilian cheeses from Queijaria Alpina, also from Goiás. The cheeses used were Raclette-type Alpine cheese aged 90 days and Stephan cheese aged 12 months.

Soon the recipe for the best fondue in Brazil will be served at the chef’s restaurant and it will also be possible to buy the recipe ready to finish at home at Casa do Suíço Empório.
9 candidates participated, including professionals and amateurs, Carolina Nalin, Clara Gaehwiler, Cristian Bauer, Diogo Donizete, Heloísa Collins and Juliana, Jeferson da Matta, Raphael Soares and Raquel Chapchap, judged by the criteria established by the Swiss competition with a focus on recipe originality .
Now Clara is preparing to compete in the international final on November 18, in Tartegnin, known in the Vaud region for its wines and the beautiful view of Lake Geneva and the Alps.
“One of the rules was that all fondues they had to have 50% Gruyère PDO, cheese that was offered by the competition to the candidates. The other half was your choice. It was very tasty and interesting to see the good Brazilian cheeses in alliance with the king of Swiss cheeses, consecrating this typical dish that is a symbol of our culture” said Fabien Clerc, director of Tourism of Switzerland in Brazil.
The presidents of the competition were the Swiss Stéphane Jayet and Philippe Chevrier, in addition to the general commissioner Débora Pereira, a journalist for the French magazine “Profession Fromager” and director of the SerTãoBras association. The invited panel of judges was composed of Brazilians from the Guilde des Fromagers.
