Palawan: Philippine paradise with beautiful landscapes and a special beer

A home brewing kit. This was the most valuable item that Filipina Ayah Javier carried back home after living in San Diego for years in the United States. It was while observing the craft brewery craze in California that she decided to venture into this new market, which is still mostly male.

This is how the story of Palaweño Brewery begins, the first female-only brewery in the Philippines. The brand’s name comes from the island of Palawan, considered a UNESCO World Heritage Site, and in whose capital the Palaweño factory is located.

The entire manufacturing process is handmade: from producing the drink itself to placing the labels and sealing the bottles. Hops are used together with local spices, and the purity of the water, according to Ayah Javier, is what gives the beers there a unique character.

“We try to incorporate elements from Palawan like the honey here – we have three types of honey in Palawan. As for fruits, we have two seasonal beers: one cream ale coconut, because we have a lot of coconut here, and a mango IPA in the summer”, says the master brewer.

“Of the people who come to spend their holidays here, most come from the other side of the world because they know that we were voted the biggest island in the world. So when we make our beers, we want them to reflect the essence of the Island of Palawan,” says Ayah.
