Pizza and cocktails? “I am the future. Abroad it is a consolidated trend, it will be the same in Italy »: word of Ciro Salvo, pizza chef for three generations, world champion of pizza – among the latest rankings and on the podium of 50 Top Pizza Europe – who with his 50 Kalò it has premises in Naples, London and soon in Rome. He let us taste his amazing pizzas from Identità Golose in Milanduring one of the de “The Masters of Pizza” conceived and promoted by Acqua Panna and S.Pellegrino, together with the Sanpellegrino drinks, to try foodpairing between great pizza and great drinks (next June 23 with Denis Lovatel and Mattia Pastori and book here). During our evening the drinks were those of Carlo Simbula: mixologist much appreciated, now consultant, who was in charge of the coolest bars in Milan (he was also al The Spirit). “There are many similarities of taste between the products for the mixologist and the pizza ingredients that allow you to experiment. In this case – says Simbula – I thought of drinks that reflect the Mediterranean character and the aromas of the pizzas they are paired with ».

The pizza to perfection

“Eating pizza with a cocktail in London has long been a trend. At first I didn’t understand, then I realized that people really like to experiment»Says Ciro Salvo. Provided, of course, that pizza and cocktails are of quality. «A good pizza must be thin, round and cooked», explains Ciro Salvo. “I look first at the color: the cornice must be spotted, the base between white and blackor without shades of yellow that indicate excess flour, and the topping must not come off or be liquid. To the taste, then, it must not be rubbery: it indicates an indigestible dough ».
