Where do chefs eat? With Simone Brunelli, from Maremonti, in São Paulo

Simone Brunelli grew up amidst Nonna’s recipes and in the kitchen of the family’s restaurant, in Cesena, in Italy. This region is known for being a thriving gastronomic region: land of Capeletti, balsamic vinegar and parmigiano reggiano.

The first time Brunelli set foot in the Brazil it was in 2008, during a quick visit. At that time, she had already gone through five Michelin-starred restaurants – among them, the three-star Azurmendi, in Bilbao, in Spain.

And it was only in 2014 that he returned to Brazilian soil, this time with plans to stay. landed in Curitiba, where I worked for four years at Terra Madre and, after going through Salvador, returned to the capital of Paraná to command the kitchen of La Varenne Gastronomia.

In January 2021, one more change: Brunelli flew to São Paulo to take on the position of executive chef at Maremonti, a trattoria born in Riviera de São Lourenço, North coast of São Paulo, and which has nine units across the state. With its Italian roots, its mission is to give more authenticity to the preparations of its native land.

Cantaloup

O Cantaloup is a great restaurant to taste affective recipes influenced by different cultures.

I especially like to go on Wednesdays or Saturdays, days when a delicious feijoada is served, made with dried meat, tenderloin, paio and ribs, accompanied by rice, farofa, crackling, kale, orange and pepper sauce. The cod cake is another error-free tip.

the pig’s house

commanded by Jefferson Rueda, the pig’s house is a mandatory destination in São Paulo. Be sure to order the tasting menu to try a little of each chef’s invention.

Among the items I like the most are pork jowl sushi and pancetta crackling with guava fruit – a typical Brazilian taste. Not to mention that the business has just been elected the 17th best restaurant in the world by The World’s 50 Best ranking, the only Brazilian on the list of the 50 best in the world.

Banzeiro

I love going to Banzeiro, do chef Felipe Schaedler, to try Amazonian products – the restaurant is original from Manaus. Always an amazing experience!

What impresses me most is the taste of river fish, such as pirarucu. Another suggestion on the very original menu is the saúva ant, which is crunchy, tastes like lemongrass and is served under a manioc foam.

Vinheria Percussi

Among my suggestions, the Vinheria Percussi it’s the Italian I recommend – in addition to Maremonti, of course. the chef Silvia smitten captures traditions well and places them on the route of contemporary Italian cuisine in dishes such as costolette d’agnello with tagliolini al rosmarino, which are grilled lamb chops, served alongside fresh tagliolini in rosemary sauce. In addition, in the truffle season, it offers freshly grated delicacy.

NB Steak

Hard to choose just one cut of the NB Steak, which brings to the table tasty and very well roasted meats. At the house I really like the flavor of the roasted strip, which is very intense, as well as the ancho and the steak nb. For drinking, I recommend exploring the Minas Gerais cachaça produced especially for the home.
